More Cook Book Recipes

I mentioned a while ago that I am going to have a cookbook someday, and here are some more recipes to add. Again, most of these are adapted recipes that I made my own, not completely original.

Squishy Bread

(This is an adaptation of my Mother-in-laws yummy zucchini bread recipe. Tanner calls it squishy bread, hence the name)

1/2 c cooking oil

1/2 c apple sauce

3 eggs beaten

2 cups grated zucchini

1 3/4 c sugar

3 tsp vanilla

3 cups flour

1 tsp baking soda

1/4 tsp baking powder

3 tsp cinnamon

1 tsp salt

Blend all ingredients. Spray Pam or grease and flour 2 loaf pans. Bake for 45 min at 350 degrees. Because of the apple sauce, it is lower in fat, and you don’t have to have as much sugar. You can’t even tell the difference in taste!

Taco Wantons

12 wanton wrapers

1/2 package taco seasoning

10 oz of chicken ( I used 8 chicken breast tenders)

ranch dressing

cheese

salasa

sour cream

Spray non-stick cooking spray in a 12 count cupcake pan. Place one wanton wrapper in each cup. Meanwhile, boil chicken in a sauce pan until cooked ( it takes about 15 min). Place chicken in a mixing bowl and shred. Add taco seasoning and ranch dressing to the chicken. Add dressing until mixture is creamy, but not runny. Place a spoonful of chicken mixture into each wanton. Top with cheese and stick in a 350 degree oven until cheese is melted. Top with salsa and sour cream.

    My mom has that same recipe, but she calls it zucchini anyone will eat. That’s so funny.
